Reuben Sandwich recipe


  • 1 tablespoon low-fat Thousand Island dressing
  • 2 slices rye or pumpernickel bread
  • 2 ounces lean turkey or chicken (such as Healthy Choice)
  • 1 thin slice low-fat Swiss cheese (such as Alpine Lace)
  • 1/3 cup sauerkraut, drained

Cooking Instructions

Spray a non-stick frying pan or skillet with non-stick cooking spray.

Spread Thousand Island dressing on both piece of bread. Layer one slice of bread with Swiss cheese, turkey or chicken, and sauerkraut. Top with other slice of bread.

Spray both sides of the sandwich with cooking spray.

In the prepared frying pan, grill sandwich on each side, approximately 1 minute, or until the cheese has melted and the bread is golden brown.
Makes 1 sandwich
